  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup sweet potatoes, cubed
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1/2 cup peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon cayenne pepper
  • 1 cup chopped kale
  • 1/4 cup chopped peanuts

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add the onion, garlic, and ginger; sauté until softened.
  3. Add sweet potatoes, diced tomatoes, coconut milk, and vegetable broth; simmer until sweet potatoes are tender.
  4. Stir in peanut butter, soy sauce, and cayenne pepper; mix well.
  5. Add the chopped turkey bacon and kale; cook for an additional 5 minutes.
  6. Serve with chopped peanuts on top.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Adjust the spice level by adding more or less cayenne pepper.
