- 4 slices turkey bacon
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup sweet potatoes, cubed
- 1 can diced tomatoes
- 1 can coconut milk
- 1 cup vegetable broth
- 1/2 cup peanut butter
- 1 tablespoon soy sauce
- 1 teaspoon cayenne pepper
- 1 cup chopped kale
- 1/4 cup chopped peanuts
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- In the same pot, add the onion, garlic, and ginger; sauté until softened.
- Add sweet potatoes, diced tomatoes, coconut milk, and vegetable broth; simmer until sweet potatoes are tender.
- Stir in peanut butter, soy sauce, and cayenne pepper; mix well.
- Add the chopped turkey bacon and kale; cook for an additional 5 minutes.
- Serve with chopped peanuts on top.
Notes
- For a vegetarian version, omit the turkey bacon.
- Adjust the spice level by adding more or less cayenne pepper.
